The Basil Chicken and Tomato Salad is a delicious way to combine fresh summer tomatoes and basil with chicken and pasta for a hearty and complete dinner that everyone will love.


This salad recipe is designed to be a main dish, but if you remove the chicken, it makes a great side salad. Either way, it’s a perfect summer recipe for your family.

Can I Use Fresh Basil?

Absolutely! While I used dried basil for budget reasons, fresh basil will elevate this dish. Use about a tablespoon of chopped fresh basil in the marinade and another teaspoon in the pan sauce. You can also sprinkle some fresh basil over the finished dish.


What Else Can I Add?

This is my favorite part of every recipe—sharing ideas to make it extra special. Here are some modifications to elevate this tomato basil chicken:

  • To make it creamy, stir a splash of heavy cream or a couple of tablespoons of cream cheese into the sauce.

  • To make it thick and creamy, add a tablespoon of heavy cream or a couple of tablespoons of cream cheese to the sauce.

  • After removing the chicken from the skillet, add the sliced grape tomatoes and sauté until soft before adding the remaining ingredients.

  • Cook some bacon in the skillet before cooking the chicken. Then, scatter it over the dish.

  • To make it extra cheesy, top each piece of chicken with a slice of fresh mozzarella. To melt the mozzarella, cover the skillet with a lid.

    Tomatoes: after removing the chicken from the pan, add halved grape tomatoes and sauté until softened before adding the ingredients for the pan sauce.

  • Add bacon: cook some bacon in the pan before the chicken, then crumble it over the finished dish.

  • To make it cheesy, top each piece of chicken with a slice of fresh mozzarella. Cover the skillet with a lid to melt the mozzarella.

Ingredients:

  • 3 large ripe tomatoes (cut into wedges)

  • 12 ounces of chicken breast from 1 rotisserie chicken

  • 5 ounces avocado (sliced)

  • 2 tablespoons extra virgin olive oil

  • 1 lemon

  • 1/2 cup small fresh basil leaves

  • kosher salt

  • Pinch of black pepper


Directions:

  1. Divide the tomato wedges between 4 plates or bowls.

  2. Shred the chicken breast into large pieces and arrange over the tomatoes with the avocado.

  3. Drizzle with olive oil, squeeze with lemon juice, and season with salt and fresh pepper, to taste.

  4. Top with fresh basil leaves.


 

What to Serve with Tomato Basil Chicken

It would also go great with something like a cucumber tomato salad, lemon parsley pasta, or pesto cheese toast.
